OYSTER SOUP

INGREDIENTS:

• 1 large onion, chopped
• 1 medium bell pepper, chopped
• 6 cloves garlic, chopped
• 1 pt small oysters
• 3 qt water
• 1 cup parsley
• 4 sprigs celery, cut in ¼” pieces
• 1 cup pure olive oil
• 1 Tbsp Worcestershire sauce
• 1 Tbsp white wine
• 6-7 large potatoes, sliced round
• salt and pepper to taste

DIRECTIONS: 

1.Sauté all seasonings in ½ cup olive oil.

2. Add water, salt, pepper, wine and ½ cup olive oil.

3. Add potatoes and boil until potatoes are nearly tender (approximately 30 minutes at medium heat).

4. Add oysters and cook 5 minutes more.
