Our oysters are grown in floating cages, tucked right behind Deer Island, in the nutrient rich waters of the Mississippi Sound. They are tender and plump with a mild brine up front, hints of honey suckle and a perfect sweet cream finish.
These guys are a medium sized oyster, cultured with the traditional raw bar in mind. Coming in at 2.5″-2.75″ they are packed with all the Mississippi flavor you can stand. The flavor profile is a mix of butter cream and vegetal accents. Add a dash of salt from the Mississippi Sound and this gives these little guys a term that the locals have coined “That Fire”.
